Vines in the high dry valleys
Cafayate sits in a dry basin ringed by mountains, where vines thrive under intense sun and cold high-valley nights. Torrontés is the famous expression, but the farming system matters more than a single grape.
North of town, the Quebrada de las Conchas cuts through red sedimentary forms. Walked slowly with geological context, it becomes landscape rather than a roadside gallery.
Cafayate tastes different because the valley is different: stronger sun, cold nights, scarce water and red stone close around the vines.
