Taste migration, land and invention

South Africa's cities change the meaning of the road between them. Johannesburg brings invention and argument. Durban carries Indian Ocean migration into spice and bread. Cape Town places food beside mountain, ocean and contested history.

In the Winelands, taste returns to land and labour. Far north, rooibos belongs to one narrow mountain ecology. The journey is richest when every table has a person and a place behind it.

A plate in Durban, a Johannesburg studio and a Cape vineyard are not diversions from the landscape. They explain who has moved through it and what they made there.
