Arequipa
Arequipa is built from sillar, the white volcanic stone that gives the city its light, under three volcanoes. At 2,300 metres it is the natural first step in acclimatising before the canyon and the altiplano.

Arequipa is the acclimatisation stop that happens to be one of the most beautiful cities in South America.
It is built almost entirely from sillar, a white volcanic stone that throws light back at you, and it sits at 2,300 metres under El Misti, Chachani and Pichu Pichu. The Santa Catalina monastery is a walled town within the city, painted in ochre and cobalt, where cloistered nuns lived for four centuries.
The practical argument for Arequipa is the altitude gradient. From sea level in Lima, 2,300 metres is a reasonable step; from here the Colca canyon at 3,300 and the altiplano at 3,800 stop being dangerous and start being merely cold.

Each stop on the route is a deliberate step upward, which is what makes the high days enjoyable rather than survivable.
